Double Date

Our Valentine's double date was postponed due to the Texas blizzard, but the following week we were able to go out with our church friends.  I had to try cornbread-fried catfish - it was light and pretty yummy. Lucas opted for a good burger.

A cupcake ATM?!!  The red velvet cupcake was delicious!

Catching Up with Friends

We enjoyed some Italian gelato and walking around town with our Italian friends. 


Some restaurants have their dining rooms open again. So we also enjoyed going out for tacos with our other friends. And Clara was/is so happy her collarbone is healed!

Sun and Seventy Again

Yep, 3 days after the blizzard and it's 70 degrees, the snow's all melted, people are out jogging in shorts, and we went for a family bike ride. Gotta love Texas weather!

Surviving the Texas Blizzard

The Valentine's snow turned into the blizzard of the century for Texas! Several inches of snow and some ice, temps dropping below zero for several days, rolling power outages and people's pipes freezing in their homes, minimal internet so folks aren't able to work from home, no mail being delivered,... It's been a mess! Thankfully we've been doing ok. Our fireplace has been a big blessing for sure! And when the heat does come on, Lucas has had space heaters blowing on some of the pipes in the walls.  

Perfect time for hot chocolate. 

We've continued with our school work as it keeps us busy during the long, chilly days. 

Sometimes we've had dinner and board games by candlelight, and other times the Kindles are charged and ready for some gaming. :) We have one more cold night to get through, and then...knowing Texas, we will probably be in shorts and t-shirts next week! haha.

Valentine's

The kids had Valentine's parties at their homeschool co-ops. And I received some lovely, cheerful flowers from Lucas.

 

Then it was special for the girls to go out (to Cheesecake Factory) this year with their Dad. 

We got freezing temps and snow on the 14th! This was very unusual for Texas - record-breaking low temperatures actually. (We are praying our pipes don't freeze!)  Lucas and my double date was cancelled. But we had a cozy family day at home.

Thankful for All We are Learning

Brent was so pleased that he could classify and diagram this complex sentence all by himself!

Amber's co-op 7th grade class had a big science fair in January. It was 10 weeks of  science research, experimentation, analysis, etc. culminating is a day of presenting her finding in front of a panel of 6 judges. The judges came from outside the co-op, and many of them had STEM backgrounds. Amber won 2nd place out of the 12 students! Her conclusion: The best way to preserve the carbonation in 2 liters of soda is...just to recap the bottle and put it back in the fridge. :)
